Preheat oven to 400 degrees F. Season the chicken pieces on both sides with salt and pepper. Lay pieces flat in a roasting pan, skin side up. Crumble herbs over chicken. Pour one cup of boiling water in the pan and bake for 30 minutes.
Drizzle the melted butter over the chicken and baste with the pan juices. Roast another 10 minutes then baste with pan juices and return to the oven. Baste again every 5 minutes until a knife test shows that the chicken is thoroughly cooked at the center. Serve the chicken and pan juices with mashed potatoes or rice.
