Ingredients
- 1 cut-up chicken
- salt
- black pepper
- ½ tsp. thyme
- ¼ tsp. rosemary
- 1 cup boiling water
- 2 Tbsps. melted butter

- Preheat oven to 400 degrees F. Season the chicken pieces on both sides with salt and pepper. Lay pieces flat in a roasting pan, skin side up. Crumble herbs over chicken. Pour one cup of boiling water in the pan and bake for 30 minutes.
- Drizzle the melted butter over the chicken and baste with the pan juices. Roast another 10 minutes then baste with pan juices and return to the oven. Baste again every 5 minutes until a knife test shows that the chicken is thoroughly cooked at the center. Serve the chicken and pan juices with mashed potatoes or rice.
