Ingredients
  • 8 oz spaghetti
  • 1 bunch green onion sliced (white parts only)
  • 2 tbsp sesame oil
  • 1/3 cup peanut butter
  • 1 tsp fresh ginger
  • ¼ cup soy sauce
  • ¼ cup hot water
  • 1 tbsp cider vinegar
  • 1 tsp sugar
  • Pinch of red pepper flakes

Instructions
  1. Cook your pasta until done and drain. Meanwhile, combine the oil and onions in a skillet and sauté over low heat until tender. Add the ginger and cook for another 2 minutes. Mix in the peanut butter, soy sauce, water, vinegar, sugar and red pepper flakes.
  2. Toss with noodles and serve. This is great cold so put it in a thermos for lunch the next day.
