Heat oil in a large skillet until it’s medium-hot. Add veggies and garlic and saute until tender. Add smoked dulse and cook for another two or three minutes. Spread a ¼-inch layer of goat cheese on each flatbread. Distribute vegetable mixture on top of goat cheese.
To serve as a snack or appetizer, the flatbread can cut into 1-inch sections to serve as an appetizer or snack, or the entire flatbread can be toasted and served open-face as a pizza.
