Ingredients
- ½ cup coconut oil
- ¼ cup sugar
- ½ tsp. vanilla extract
- 1 tsp. orange zest
- 2 Tbsp. orange juice
- 1¼ cups flour
- Pinch of salt

Instructions
- Preheat oven to 350 F. Line a baking sheet with parchment paper.
- Mix coconut oil through orange juice in a medium bowl using either a spatula or a mixer.
- Slowly add flour to bowl, be careful not to over mix.
- Roll the dough into a ball, flatten to form a disk. Cover in plastic and chill for 20 to 30 minutes.
- Roll the dough to approximately ¼ of an inch thick. Sprinkle with flour to prevent sticking if needed.
- Use a cookie cutter to cut out cookies and gently lift and place on the baking sheet.
- Repeat for 12 to 15 minutes or until crisp. Remove from oven and let cool.
