Ingredients
  • ½ cup coconut oil
  • ¼ cup sugar
  • ½ tsp. vanilla extract
  • 1 tsp. orange zest
  • 2 Tbsp. orange juice
  • cups flour
  • Pinch of salt

Instructions
  1. Preheat oven to 350 F. Line a baking sheet with parchment paper.
  2. Mix coconut oil through orange juice in a medium bowl using either a spatula or a mixer.
  3. Slowly add flour to bowl, be careful not to over mix.
  4. Roll the dough into a ball, flatten to form a disk. Cover in plastic and chill for 20 to 30 minutes.
  5. Roll the dough to approximately ¼ of an inch thick. Sprinkle with flour to prevent sticking if needed.
  6. Use a cookie cutter to cut out cookies and gently lift and place on the baking sheet.
  7. Repeat for 12 to 15 minutes or until crisp. Remove from oven and let cool.
