Mac and Cheese

  • 1stick unsalted butter
  • cups milk
  • ½cup unbleached white flour
  • Tbsps. salt
  • ¼ tsp. freshly ground black pepper
  • 3cups freshly grated white sharp Cheddar cheese12 oz.
  • cups freshly grated gruyere6 oz.
  • 2lbs. elbow macaroni
  1. Fill a large pot with water and bring to a boil. Cook macaroni according to box directions. Drain in a colander and rinse with cold water.
  2. Heat milk in a medium saucepan over medium heat. In the pasta pot, melt butter over medium heat. When butter bubbles, add flour. Whisk for one minute.
  3. While whisking, slowly pour in hot milk, whisking constantly until mixture bubbles and thickens.
  4. Remove from heat. Mix in both cheeses, salt and pepper. Add in reserved macaroni and stir until mixed.
Recipe Notes

Optional: At the end, add in some chopped organic ham and peas or poached organic chicken and spinach to make it a more hearty meal.
