Cheesy Crockpot Tortellini

  • 1lb Italian sausage, casings removed (I like Bianco’s Sweet Italian)
  • 124 oz. jar marinara sauce
  • 114 oz. can chopped tomatoes
  • 1family-size packet fresh cheese tortellini
  • 1/2cup dried onion flakes
  • 1cup shredded mozzarella cheese
  • 1cup shredded Cheddar cheese
  • 1cup shredded Parmesan cheese (divided)
  • 2tsp. Italian seasoning or oregano
  • fresh chives
  1. Crumble the Italian sausage into large skillet. Cook over a medium/high heat until almost brown.
  2. Drain.
  3. Put the meat, marinara sauce, tomatoes, onion and herbs in a slow cooker.
  4. Cover and cook on low heat for 6 to 8 hours.
  5. About 15 minutes before serving, add tortellini and the cheeses (reserving half the Parmesan)
  6. Cook for 15 minutes (check the tortellini-don’t over cook!)
Recipe Notes

To serve:

Place Cheesy Tortellini in a shallow dish, sprinkle the reserved Parmesan over the top

Snip and sprinkle the chives over the Parmesan.

Serve with a green salad and garlic bread.
