Ingredients
  • 1 Tbsp. salt
  • 1 cauliflower, trimmed and separated into florets of uniform size
  • 1 Tbsp. lemon juice
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup breadcrumbs
  • ½ tsp. crumbled dried rosemary
  • 1 cup grated Parmesan cheese
  • 4 Tbsps. melted butter

Instructions
  1. Melt the butter over low heat in a small saucepan with a heavy bottom. Add the flour and cook for 3 minutes, stirring constantly, until the mixture just starts to turn light brown. Remove from heat and add all the hot milk while whisking thoroughly.
  2. Return to the stove and cook over medium high heat until thickened.
  3. Preheat oven to 375 degrees F. Cook the cauliflower in a large pot of boiling, salted water for 4 minutes. Drain and place the cauliflower in a 2-quart buttered oven dish, sprinkle with lemon juice, then with salt and pepper. Spread the white sauce evenly over the top. Mix the bread crumbs and the 4 tablespoons of melted butter; stir in the grated cheese. Distribute the crumb mixture evenly over the top. Bake for 20 minutes.
