Ingredients
  • 2 (16 oz.) cans black beans
  • 4 cloves garlic, minced
  • 2 tsps. ground cumin
  • 3 Tbsps. olive oil
  • 1 cup chicken broth
  • 1 1/2 tsps. sea salt
  • 3 Tbsps. chopped cilantro (optional)

Instructions
  1. Drain and rinse black beans.
  2. In a medium saucepan, heat olive oil over medium heat and saute garlic and cumin until fragrant.
  3. Add black beans, broth and salt.
  4. Reduce heat to medium-low, stirring frequently until beans are heated through.
  5. Or, after sautéing the garlic and cumin, you can place everything in a Crock-pot on low heat for a couple of hours.
  6. If desired, stir in the cilantro just prior to serving.
Recipe Notes

Most often, I roll these up in a whole wheat tortilla with chopped peppers and onions and some Colby-jack shredded cheese. Makes for a quick, easy supper

Also leftovers are good in breakfast burrito with scrambled eggs and sriracha sauce.
