Ingredients
  • 1 lb. asparagus
  • ¼ cup butter
  • 1 medium onion coarsely chopped
  • ¼ cup flour
  • 4 cups low-sodium chicken broth
  • 1 cup light cream
  • salt
  • black pepper

Instructions
  1. Snap off the tough ends of asparagus and discard. Cut the tips off and reserve them.
  2. Cut the spears into pieces about 1 inch long.
  3. Melt the butter in a soup pot and sauté the onion until translucent. Add the flour and stir constantly over low heat for several minutes until the flour-butter mixture is light brown.
  4. Off heat, thoroughly whisk in the chicken broth. Return to the stovetop and bring rapidly to a simmer, whisking occasionally.
  5. Add the asparagus spears and bring to a boil; reduce the heat and simmer until the asparagus is tender.
  6. Allow to cool a little for safety’s sake and puree the soup.
  7. Add the asparagus tips, bring to a simmer, and simmer for 3 minutes.
  8. Stir in the cream and heat until hot enough for serving. Add salt and pepper to taste.
