    March is here and spring is in the air. Well, a little. This past Friday the weather was so nice, my husband and I decided to take a drive and soak up some the warmth. While cruising through our neighboring town of Waltham, we stopped by Porky Sue’s and had the best lunch ever. It is so nice to know that you don’t have to travel all the way to Ellsworth anymore to enjoy a fabulous meal. While traveling the roads, there is no doubt that warmer weather is coming, the potholes tell me so. This would be a great year for the state to provide a little extra asphalt our way. Let’s hope they agree. Until then, take it easy and go slow, car repairs and tire replacements are no way to start off the season.

  • Carrot Cake Redux and Refined

    You’ll find the earliest carrot cake recipes in the “Moosewood Cookbook” (1977) and “The Silver Palate Cookbook” (1979). The most recent revision of “The Fannie Farmer Cookbook” (1990) calls it a “Rabbit’s Carrot Cake” and offers a plain recipe in two loaves, without the cream cheese frosting. “The Joy of Cooking” ignores it, and in most European cookbooks, it simply doesn’t exist. Britain is the exception, where it is considered a “healthy cake” — a perception fortified, according to Alan Davidson, “by the use of brown sugar, whole meal flour and the inclusion of chopped nuts, and only slightly compromised by the cream cheese and sugar icing which appears on some versions.”
