Meatloaf makeover

Carol Falkowski is known nationwide as an authority on drug abuse, but former Ellsworth American publisher James Russell Wiggins’ granddaughter also is expert in something else: Meatloaf.
Falkowski, the daughter of the late newsman’s eldest daughter Geraldine, is the former director of the Minnesota Department of Human Services’ alcohol and drug abuse division. Falkowski still makes her home in the Gopher State where “winters are long.”
Known for her fine home cooking, Falkowski decided the meatloaf — a go-to dish in many American households — deserved a makeover. For several years, she has been thinking “outside the pan” and had fun transforming the humble loaf into a shamrock topped with peas, carrot-spiked fish, Santa Claus with a sliced-cucumber beard and other artful creations.
