Island baker shares stories and recipes



STONINGTON — The best friendships are often forged over pie and coffee and no one knows this better than Susan Scott.

The Stonington native has spent the past 37 years baking for island residents and visitors, first at Fisherman’s Friend Restaurant, then Susie Q’s Sweets and Curiosities.

Scott has written a cookbook, “Baking with Susie,” that features recipes and memories from Susie Q’s and Fisherman’s Friend Restaurant, which her son now operates but she continues to supply with desserts.

The book is available at Susie Q’s and Fisherman’s Friend.

Zucchini Bread

Susan Scott includes this recipe in her cookbook, “Baking with Susie.” Scott says her friend, Judi Burke of Isle au Haut, gave her the recipe.

Ingredients

2 eggs

1 and 2/3 cup sugar

2 tsp. vegetable oil

3 cups freshly grated zucchini

2 ½ cups flour

1 ½ cups wheat germ

2 ½ tsp. baking powder

1 tsp. salt

2 tsp. cinnamon

1 cup chopped nuts

1 tsp. vanilla

Combine eggs, sugar, oil, zucchini and mix well. Add remaining ingredients and stir well to blend.

Turn the batter into a greased loaf pan and bake at 350 for one hour or until a pick comes out clean.
