Dishing Up Spring

A Midcoast chef, food columnist and blogger was espousing the farm-to-table movement before it became cool.

“I didn’t think anything of it,” said Laura Cabot, owner of Laura Cabot Catering in Waldoboro. “I just wanted the best stuff to work with.”


Cabot served farm fresh produce at her restaurant, the Pinecone Café in Waldoboro, for 20 years before switching her focus to catering.

Cabot spoke from her kitchen this week as she was preparing miniature quiches with fiddleheads, capicola-wrapped asparagus and egg salad with fresh chervil for a gala at the Farnsworth Museum in Rockland.

Cabot writes the “Locavore” column for Maine Food & Lifestyle magazine and writes for the magazine’s blog, Plating Up ( The blog also features posts by local cooks and cookbook authors Brooke Dojny, Linda Greenlaw, Martha Greenlaw and Sandy Oliver.

Melanie Hyatt, editor of Maine Food & Lifestyle magazine, said the blog began in March 2008 as an offshoot of the magazine, which focuses on connecting people to local resources such as Laura.

“On the blog we share food stories, give cooking tips, point our readers to great Maine food producers and restaurants, and share recipes,” Hyatt said. “Many of our recipes involve using seasonal ingredients, and we currently have 1,400 for readers to peruse and try.”
